Why tiramisu doughnuts?
Tiramisu isn’t a trend. Italy’s been making it since the 1960s — born in the Veneto region, built on mascarpone, coffee and cocoa, and now one of the most recognised Italian desserts in the world. Tiramisu means “pick me up” in Italian. That tells you everything about what it should feel like. Not heavy. Not sickly. A coffee and mascarpone hit that does exactly what the name promises.
It’s also Sonia and Paweł favourite dessert. Not their favourite doughnut flavour — their favourite dessert, full stop. When they were building the Bombolone menu, putting tiramisu on it wasn’t a commercial decision. It was personal.
The Italian version — the tiramisu bomboloni — is what Mama Mia Tiramisu is based on. This isn’t a twist on tiramisu. It’s how it’s meant to be adapted. A mascarpone doughnut in the Italian tradition — made properly, with a cream that takes real ingredients and real time to get right. The only question was whether they could make it do justice to the dessert. That took a while.

How it's made
Most doughnuts are made commercially — mixed by machine, filled by machine, finished by machine. Bombolone’s are not.
Every morning before we open, the dough is mixed from scratch. Each portion proved until it reaches the right texture, shaped by hand. No two identical. Fried at the right temperature until the crust holds.
The tiramisu cream is where this one is different from every other flavour. It’s made in-house — mascarpone, whipping cream, eggs, espresso coffee paste, caster sugar. Mixed and set until it reaches the texture that holds inside a doughnut without collapsing. Then filled by hand. The Callebaut cocoa goes on last, dusted over the top. The ‘B’ chocolate piece finishes it.
