WHY PISTACHIO DOUGHNUTS?
Pistachio isn’t new. Italy’s been doing it properly for years. People just caught up.
The colour, the flavour, the way it looks on a counter — pistachio doughnuts went from a niche find to one of the most searched-for flavours in London almost overnight. There’s a reason for that. It’s genuinely one of the best things in Italian pastry.
The Italian version — the pistachio bomboloni — is what Pistachio Amore is based on. A traditional Italian filled doughnut. Made properly. We added it to the Bombolone menu because it belongs here: Italian in character, genuinely delicious rather than just on-trend, and the kind of thing that makes people stop mid-bite. It became our best-selling doughnut almost immediately. It hasn’t moved since.
WHAT MAKES IT SPECIAL
It starts with the dough. Italian brioche-style — soft, airy, made to hold a filling without disappearing behind it.
Then comes the Italian pistachio cream. Not a hint of it. A proper filling — rich, nutty, exactly what you hoped it would be. Filled by hand into every doughnut, not injected by machine. You notice the difference in the first bite.
On top: white chocolate coating, a pistachio sauce drizzle, ground pistachio, sliced pistachios. It looks as good as it tastes. It’s filled properly — not just enough to say it is.

HOW IT’S MADE
Most doughnuts are made commercially — mixed by machine, injected by machine, finished by machine. Bombolone’s are not.
Every morning before we open, the dough is mixed from scratch — flour, eggs, fat, yeast. Each portion shaped by hand. No two identical. Fried at the right temperature until the crust holds. Then the Italian pistachio cream is filled by hand, the white chocolate coating goes on, and the pistachio drizzle, ground pistachio, and sliced pistachios finish it off.
Made every morning before we open. Gone when they’re gone.
