Why hazelnut chocolate doughnuts?
Hazelnuts and chocolate have been together in Italy long before anyone put them in a jar. The combination goes back to the Italian bacio — the word means “kiss” — the classic Italian confection built on roasted hazelnuts and dark chocolate. It became famous because the flavour logic is perfect: the nuttiness balances the bitterness, the chocolate rounds out the roast.
That’s the combination behind Choco Hazel Bacio. Not a reference to the spread everyone knows — a reference to the Italian tradition that came first. The hazelnut chocolate bomboloni is what this is based on. Made properly, with a cream that uses real Nocciola Piemonte I.G.P. hazelnuts, not a factory formula.

Then comes the dough. Italian brioche-style — soft, airy, made to hold a generous filling without becoming heavy. Filled by hand, not by machine. The difference is in the ratio — you get cream to the centre, not just a pocket near the edge.

How it's made
Most doughnuts are made commercially — mixed by machine, filled by machine, finished by machine. Bombolone’s are not.
Every morning before we open, the dough is mixed from scratch. Each portion proved until it reaches the right texture, shaped by hand. No two identical. Fried at the right temperature until the crust holds.
Our Piedmont I.G.P. gianduja cream is filled by hand into the centre first. Then the doughnut is dipped in dark chocolate compound coating and left to set — giving the exterior its snap. The white chocolate drizzle goes on in lines across the coating. Roasted nibbed hazelnuts are pressed into the top while the chocolate is still setting. The ‘B’ chocolate piece finishes it.
