In Poland, it became sernik — made from twaróg, a sweet cottage cheese with a gentle tang. In Italy, it became torta di ricotta — soft, barely sweet, eaten cold. Two traditions, both built on the same thing: fresh cheese, minimal sweetness, genuine flavour.
Dolce Cheesecake sits between those two traditions. Paweł grew up eating sweet cottage cheese doughnuts at home in Poland — they were on the breakfast table, at celebrations, in every kitchen that felt like home. When Bombolone’s menu was being built, the cheesecake doughnut wasn’t a trend decision. It was memory.

Made from scratch before London wakes up. Every morning, the dough is mixed from scratch. Each portion proved until it reaches the right texture, shaped by hand. No two identical. Fried at the right temperature until the crust holds.
The no-bake cheesecake cream is made in-house first. Then filled by hand into the centre of each doughnut. The white fondant glaze goes on and sets clean. White chocolate lines go across the glaze. Coconut flakes are pressed in while the glaze is still setting. The ‘B’ chocolate piece finishes it.
