Sonia’s grandmother made two things that ended up on the Bombolone menu.
The first was lemon meringue pie. That became the Lemon Fantastico — lemon curd filling, in-house meringue, slightly burnt at the edges. The second was apple pie. Spiced, buttery, the kind with a proper crust.

The coating story
Most doughnuts get a glaze from a list of standard options. Sugar glaze. Chocolate glaze. White chocolate.
Apple Pie di Nonna went through several coatings before anyone was happy. Each one was fine. None of them were right. The apple filling was there — diced apple, ground cinnamon, genuinely fruity and warm. But the coating kept missing the point.
An apple pie doughnut needs a coating that completes the idea — the way a good pastry crust does. Nothing from the standard list did that.
Then Sonia said: let’s do maple butter.
